The fermentation of this must begins in new French and American oak casks. The fermentation takes approximately 21 days. After this period, we refill the casks. To reduce the wine’s acidity, malolactic fermentation is carried out in the cask. After this second fermentation, its lees are continuously stirred until after 5 months the casks are emptied and the wine is prepared for bottling.
Characteristics
It has a golden yellow colour with glints of gold. The secondary aromas typical of fermentation in the cask stand out, roasts, butter, honey, quince and light touches of the variety of which it is made in the background. In the mouth, it is fresh, dense and perfectly combined with the wood. A big finish gives this wine personality.
